I
am still alive! The past two months have been a complete mess: I had to travel
three weeks to a lab in Madrid, then I had like 1 zillions things to do here
and I haven’t stopped one minute!
However,
do you know what I did this morning just for me, because I deserve it? A super
breakfast! I was alone this weekend, so on Sunday morning I woke up more or
less early, and I started cooking a bunch of pancakes with orange syrup and
melted chocolate, then I made some coffee, I dusted off the fancy dishware and
I ate everything while reading the news. Just for me….because!
How I did it? Here come the recipes:
For
the pancakes:
150
g flour
2
large eggs
2
tablespoon sugar
50
g melted butter
2
glasses milk
2
teaspoon baking powder
First,
mix the flour, baking powder and sugar into a large bowl. In another bowl,
whisk the milk, eggs and the melted butter.
Add
the milk mixture to the dry ingredients and whisk until the mixture looks
smooth and homogeneous. Let it stand for at least 15 in the refrigerator.
Heat
to a medium-high a non-stick pan and gently add some of the mixture. Wait until
the top of the pancake starts to bubble a little and turn it over to cook the
other side. Repeat until you have a pile of delicious pancakes!
For the orange syrup:

tablespoon sugar
100
ml of water
1
glass orange juice (better if freshly squeezed)
1
tablespoon cornstarch
